Thanksgiving Pudding



Sweet potato Pudding

1 stick of butter
4 cups grated fresh sweet potato
1 cup light brown sugar or to taste
1/2 tsp baking soda
1/2 cup flour
nutmeg to taste
2 eggs beaten

Preheat oven to 350

1. Put all ingredients in a bowl and mix well
2. Put it in a well buttered baking dish
3. bake abut 20 minutes or until a good crust forms at edges.

Then stir in crust and repeat baking until another crust forms.

Total baking time is about 45 to an hour.

That sweet potato pudding recipe, which we never called pudding, but rather called it a casserole so we could eat it with dinner and still have the obligatory pumpkin, shoo fly and pecan pies for dessert, with the addition of 2 shots of bourbon and a topping made from butter, pecans and brown sugar was my mom's signature dish at holidays. I still make it as my oh so very selfish tribute to my mom contribution when I have to bring a dish to any potluck. Stillno word from Craig about the re-emergence of Crawfordslist?

Crawford's is back and people are chatting up a storm.

Love the idea of adding bourbon. Bourbon in anything is probably a good idea and pecans couldn't hurt.
